Haleem: First Melt

Have you ever been around in the busy starless nights of Hyderabad waiting for the start of Ramadan ?
I think of this and the first thing that comes in my mind is Haleem.
A wholesome melt of ghee with slow cooked mutton spiced over with cinnamon cloves and wholesome wheat, Haleem tastes heaven on earth when splashed with lemon.

The Nawab's Biriyani.


The majestic Nawabs of hyderabad have had their fair share of this and now, its ours to relish... enter the soulfully spicy, tantalizingly aromatic, sinfully indulgent, eye alluring Dum Biryani of Hyderabad.

The slim long cooked basmati rice flavored with turmeric and saffron when mystically layered with slow cooked spiced mutton or chicken thickened with melting clarified butter, sweet white coconut milk, sautéed cinnamon-cloves with a treasured mystic mix of saffron, salt, coriander, aroma filling mint, fried paste of ginger, garlic and ground green chillies under indirect heat(Dum)...heaven. This is the amazing Biryani of Hyderabad.

The balance of the preparation gives the characteristic taste of the biryani. Hot and spicy, sweet and caramel onionized, melting moments with butter, aromatically minty, tasteful of smooth slow cooked hot chicken or mutton... the mouth watering list is endless.

Some unusual preparations give rise to magical flavors, like the biryani cooked in the earthen pot add a distinct enigmatic flavor of potter clay along with the myriad of flavors your taste buds can experience one the scoops of rice and mutton or chicken.

The biryani when sided with some of the curried chicken gravy and the raitha(thick yoghurt mixed with onions, tomatoes and green chillies) or even the curried eggplant gravy can spark the characteristic taste explosion.

Travelling Sautéed Curry Shrimp!

Sautéed Curry Shrimp flavored with cinnamon & cloves mixed in gold fried ginger garlic with a hint of tangy tomato and hot green chillies....its golden, its spicy and tangy and its totally mom's recipe. A treat to the eyes, taste buds and a happy soul.

The specialty of this particular fantastic preparation is that the shrimp was first prepared as a curry and then sauteed in hot gingelly oil giving a characteristic taste of mellowed spice and it travelled 500 miles to my taste!

Juicy soft and fresh shrimp right off the fisher-woman's basket is good enough to make one remember the smell of the beach and the feel of the coastline of The Bay of Bengal, beckoning us come back to them. The spiced oil made the shrimp succinct.

The spices were amply used while preparing the curry while keeping in mind that sauteeing it would mellow it down. The ginger garlic paste was just the right secret balance adding to enigmatic tastes.

The whole preparation just tingles the taste and gives one the cause to think happy thoughts.
