A Crescendo of Taste

Imagine. A beautiful, white sand beach with shimmering water wetting your feet as the red sun sets into the horizon before you. The temperature cools down and you walk back to a hot plate of onion stuffed, lemoned chilli bajji.

The green shiny chilly is stuffed with a delicious stuffing paste of cumin seeds, coriander while the outside is deep fried with besan dal and rice-flour, all together making a slurpy hot tangy and tongue tingling bajji. But wait, there is more to come, A lemon sprinkled chill salt mix of tiny cut onions take us to the crest of the this hot wet and crispy mirchi bajji. Isn't it just amazing to listen to the waves, to feel the breeze and to taste this amazing item ?

There is never just one of these as one can never stop at one of these master preparations.
Oh well, you might argue that the mirch is too hot! Yes, and your perseverance payed....
Cut the fried mirchi bajji into smaller pieces and fry them again. Sprinkle the same lemony onions and make it into a plate of them. Put some into your mouth and feel your mouth filling up into a crescendo, to the taste, of the not so hot yet tasteful mirch, the crispy orange crust and the tangy onion.

Believe me, there is never a day better than walking and talking along the beach, listening to the sounds of the waves, the breeze touching your cheeks and a bajji to taste....

The beach beckons you to its loving embrace, feel it, cherish it....
